We headed out to St. James, New York, to take a look at a greenhouse we designed for Birdsfoot Farm — a CSA operation nestled within the Avalon Nature Preserve. While the greenhouse primarily serves as a space for starting seedlings destined for the outdoor fields, farm manager Ryan Lertora notes that he also puts it to use drying allium vegetables such as onions and garlic.
